Spinach Apple Salad – Easiest healthy salad made with spinach, apples, cranberries, walnuts, cheddar cheese chunks and pepitas served with homemade honey mustard dressing.

This salad makes for a super easy work lunch that is light and healthy but also filling! Serve as a dinner salad and more. The apples and cranberries give this salad a sweet touch while the cheddar, pepitas and walnuts add a nutty and delicious savory flavor.

  • Cutting Board
  • Chef Knife
  • Measuring Cups + Spoons
  • Mixing Bowls
  • Fork/Whisk
  • Salad Tongs

How to make my easy and delicious Spinach Apple Salad:

Super easy! Slice apples into thin slices. Cut cheddar cheese into very small chunks. Toss into a large bowl: Spinach, cranberries, walnuts, pepitas, cheese and apples. Toss in honey mustard dressing and serve immediately.

How to make homemade Honey Mustard Dressing:

Whisk together mayonnaise (or greek yogurt if you want a healthier lighter salad), mustard, apple cider vinegar, honey, black pepper, paprika, garlic powder. The recipe makes about a half cup. This dressing will last about 3-5 days in the fridge in an airtight container.

Can I make this salad ahead of time?

Yes! Make this salad up to 48 hours in advance and store in an airtight container in the fridge. Do not toss salad in dressing until you are ready to serve or your salad will be soggy. Store dressing separately in an airtight container in the fridge up to 3-5 days.

How to prevent cut apples from turning brown??

Simply toss cut apples in some lemon juice to prevent browning!

Ingredients
  

  • 3-4 cups spinach
  • 1 apple sliced thin
  • 1/4 cup dried cranberries
  • 1/4 cup walnut halves or pecans, cashews
  • 2 tbsp pepitas
  • 1/3 cup cheddar cheese cut into small chunks
  • 2-3 twists of fresh cracked pepper

Honey Mustard Dressing:

  • 1 1/2 tbsp honey
  • 1 tbsp mustard
  • 6 tbsp mayonnaise or greek yogurt
  • 2 tsp apple cider vinegar
  • 1/8 tsp garlic powder
  • 1/8 tsp paprika
  • 1 twist of fresh cracked pepper
