Ingredients you need to have on hand to make Molasses Cookies:

All-Purpose Flour – Extremely versatile flour perfect for baking cookies.

Brown Sugar – Light or dark brown sugar both work great in this recipe.

Butter – I used unsalted butter but you may also use salted butter in this recipe. You will need to soften the butter to room temperature.

Egg – Increase richness of the cookie.

Baking Soda – To assist in the rising process.

Salt – I almost always use sea salt in my recipes but you can use any salt you have on hand.

Molasses – A good quality molasses like organic or Grandma’s brand.

Vanilla Extract – A good quality pure vanilla extract.

Ground Cinnamon – Adds a delicious warm flavor to the cookie

Ground Ginger – Added spice to the cookie.

Nutmeg – Added spice and flavor.

Granulated Sugar – To roll the cookie dough in prior to baking.

Tools to have on hand when making these cookies:

  • Stand Mixer or Hand Mixer – To mix your cookie dough.
  • Measuring Spoons + Cups – For properly measuring your ingredients.
  • Baking Sheet – Any baking sheet will do
  • Cooling Rack – For cooling your cookies.
  • Parchment Paper – To prevent your cookies from sticking to the baking sheet.
  • Whisk – To mix the flour and the cinnamon sugar.
  • Mixing Bowls – For mixing the cinnamon sugar and the flour mixture.
  • Plastic Wrap – To cover the dough while chilling in the fridge.

How to make the Best Chewy Molasses Cookies Ever:

In a large bowl, mix flour, baking soda, cinnamon, ginger, nutmeg and salt.

In the bowl of your stand mixer with the paddle attachment, beat together butter and brown sugar until smooth. Add vanilla extract and molasses and beat to combine. Add egg and beat until smooth.

Add flour mixture to the wet ingredients and beat until fully combined. Cover bowl with plastic wrap and place in the fridge for 30 minutes to chill.

Preheat oven to 350 degrees.

Line a baking sheet with parchment paper. Roll about 1-1/2 tablespoons of cookie dough into a ball. Then roll into granulated sugar and transfer to the baking sheet. Repeat with remaining dough.

Bake cookies for 10-12 minutes until golden and a toothpick runs through the cookie and comes out clean. When done transfer cookies to a cooling rack.

How to store homemade cookies:

These cookies will last in an airtight bag or container on the counter for up to 3-5 days.

You can also store raw cookie dough or baked (cooled) cookies in an airtight container or freezer bag in the freezer for up to 3 months.

When you are ready to use the dough, remove from freezer and let soften up just enough so you can easily form balls of dough. Then, follow recipe instructions.
