Blackened Chicken Alfredo - Penne pasta and pieces of blackened chicken tossed in a creamy homemade Alfredo sauce. Blackened Chicken Alfredo is a slightly spicy and creamy pasta that you'll crave!

What is Blackened Chicken?
Cooking the chicken over high heat with lots of seasonings gives the chicken a really nice dark crust. That crust gives the chicken tons of flavor with some nice heat to it.
Blackened chicken isn't meant to be cooked until black, just a nice dark brownish red.
Ingredients you need to make Blackened Chicken Alfredo:
Short Cut Pasta - Penne pasta or any other short cut pasta of your preference. You can even use fettuccine noodles.
Heavy Cream - You'll need about one and a quarter cup heavy cream for the Alfredo sauce.
Parmesan Cheese - Fresh parmesan cheese grated off the block is best in this recipe but you can use pre-grated as well. You'll need one cup of grated parmesan for the sauce.
Butter - Salted or unsalted butter both work fine. You'll need three tablespoons for the sauce.
Garlic - Fresh garlic is always best in pasta dishes. If you don't have fresh on hand you can substitute for 1 teaspoon garlic powder. You'll need two cloves of minced garlic.
Onion - Yellow, white or sweet onion. You'll need a half cup chopped for the sauce.
Parsley - Fresh or dried parsley. I used a half teaspoon dried parsley for the sauce and also added a sprinkle on top.
Basil - Dried basil to add to the sauce. You'll need a quarter teaspoon.
Black Pepper - Fresh cracked or ground black pepper would be fine.
Chicken Breasts - Boneless, skinless chicken breasts. I used one pound which was equivalent to two breasts. You can also use chicken thighs in this recipe.
Blacken Seasoning - Paprika, Salt, Black Pepper, Garlic Powder, Cumin, Cayenne Pepper.
How to make Blackened Chicken Alfredo Pasta:
Cook pasta according to package instructions. Drain and set aside for later.
Heat oil in a large skillet over medium-high heat. Rub chicken all over with the blackened chicken seasoning. Carefully add chicken to the hot skillet and cook for 3-4 minutes on each side until done. Internal temp should be at least 165 degrees. Remove from heat.
In another large skillet over medium heat, add butter and onions. Cook for a few minutes until onions are soft. Add the garlic, basil, parsley, black pepper and cook for another minute. Slowly pour in the heavy cream while stirring. Stir in parmesan cheese until melted.
Transfer chicken to a cutting board and cut into bite size pieces.
Toss cooked pasta into the sauce and stir to combine. Sprinkle chicken on top. Serve with more fresh parmesan and a sprinkle of parsley (optional). Enjoy!

- ½ lb Penne Pasta
- 1 ¼ cup Heavy Cream
- 1 cup Parmesan Cheese grated
- 3 tbsp Butter
- ½ cup Yellow Onion diced

- ½ teaspoon Dried Parsley

- ¼ teaspoon Black Pepper
