Chicken Salad with Cranberries

Chicken salad made with shredded rotisserie chicken, dried cranberries and celery. This chicken salad is simple and delicious! It goes great on a sandwich, on top of crackers as an appetizer, or just by itself!

Ingredients needed to make this recipe:

  • 1-1/2 lb. rotisserie chicken (3 cups shredded)
  • 1 celery stalk, thinly sliced (about 1/2 cup)
  • 1/4 cup dried cranberries
  • 1/4 tsp tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup mayo
  • 1 tbsp lemon juice
  • 3 tbsp onion, finely chopped

Here are the tools you need for this recipe:

  • large bowl
  • fork
  • cutting board
  • chef knife
  • measuring spoons + cups

How to make homemade chicken salad with cranberries:

This recipe is super easy! All you have to do is: In a large bowl combine all ingredients until well incorporated. Serve with sliced bread or it’s great on it’s own! Enjoy!

    I just made this and actually considered leaving out the lemon juice. But I have made a few of your other recipes and decided to make it as directed. I am so happy I made as you said. It is so good! Although I am full can’t stop thinking about going back for seconds! Thanks for another great recipe.

    This was delish! The lemon juice really added some good flavor. I always make chicken salad but never have with lemon juice. So good!!
