Rotisserie Chicken Fajita Casserole – Simple and delicious Mexican style casserole made with leftover rotisserie chicken. This casserole is layered with black beans, rice, peppers, onions and cheese. Serve as a super easy family friendly meal!
I’m excited to share a brand new simple casserole recipe with you all! If you are looking for something new to make with your Costco or grocery store rotisserie chicken, this recipe is for you!
With only a few simple healthy ingredients, you’ll have dinner on the table in no time. You can make this recipe even healthier by swapping white rice for quinoa or wild rice.
Not only is my Chicken Fajita Casserole so easy to make, but it’s healthy and extremely delicious! This casserole will feed about four people depending on everyone’s appetite. It also makes great leftovers.
Ingredients you need to make Chicken Fajita Casserole:
Rotisserie Chicken – You’ll need about three cups of shredded rotisserie chicken. Don’t have a rotisserie chicken? Make your own shredded chicken by using my easy recipe here.
Bell Pepper – You’ll need two cups of red and green bell peppers sliced.
Garlic – Fresh garlic is best in this recipe but if you don’t have fresh, substitute for one teaspoon dried.
Onion – Red, yellow or white onion all work great. I used white onion. You’ll need one cup sliced.
Black Beans – You can use pinto beans instead of black beans as well. You’ll need one fifteen ounce can, drained.
White Rice – You’ll need two cups of cooked white rice. You may also use brown rice or quinoa in this recipe for a healthier option.
Diced Tomatoes – You’ll need two cups fresh chopped tomatoes or one fifteen ounce can diced tomatoes.
Cheddar Cheese – Jack, Mexican, or cheddar cheese work great. You’ll need one and a half cups shredded.
Homemade Mexican Seasoning – To make my super simple Mexican seasoning you’ll need oregano, chili powder, cumin, black pepper and salt. See recipe below for measurements.
Oil – Olive or avocado oil for cooking the veggies prior to baking.
Tools to have on hand:
- 9″x13″ Baking Dish – To bake the casserole in.
- Measuring Cups + Spoons – For properly measuring all of your ingredients.
- Cutting Board + Chef Knife – To cut the veggies.
- Large Skillet – To cook casserole mixture prior to baking.
- Cooking Spoon/Spatula – For stirring the veggies/casserole mixture while cooking.
How to make Rotisserie Chicken Fajita Casserole:
Preheat oven to 375 degrees.
Add oil to a large skillet over medium-high heat.
Add peppers and onions to the skillet and cook until tender – about 10 minutes. Stir in garlic and tomatoes and cook for another few minutes.
Remove skillet from heat and add black beans, shredded chicken, cooked white rice and seasonings. Stir to combine.
Transfer mixture to a lightly oiled baking dish. Sprinkle top with shredded cheese.
Bake casserole in a preheated oven for 20 minutes. When done, let cool for a few minutes before serving.
Serve casserole with a dollop of sour cream and salsa! Enjoy!

- 1/4 tsp Cumin
- 1/2 tsp Salt
- 1/2 tsp Oregano
- 1/4 tsp Black Pepper
- 1 tbsp Oil
