    Chipotle Pork Tenderloin

    Chipotle Pork Tenderloin - Tender and juicy oven roasted pork tenderloin recipe marinated in a sweet and spicy sauce that will blow your mind! The pork has the most amazing sweet, smokey and slightly spicy favor that is absolutely delicious.

    I am so excited to share this recipe with you all! Roasting the pork in the oven after a hot sear gives you a super tender melt in your mouth end result with a crusty exterior.

    This Chipotle Pork Tenderloin will serve about 4-6 people depending on everyone's appetite. If you are cooking for a large crowd, you can easily double this recipe too!

    We served our pork tenderloin with creamy mashed potatoes and roasted asparagus. It would also be amazing with steamed white rice or Mexican rice and black/pinto beans. I'll link a few of my favorite side dishes to serve with this pork for you below!

    Ingredients you need to make Chipotle Pork Tenderloin:

    Pork Tenderloin - You'll need a one and a half pound pork tenderloin.

    Chipotle in Adobo Sauce - I use canned chipotle in adobo sauce and just use the sauce around the peppers. If you like a lot of heat, you can chop up the peppers and use those as well.

    Maple Syrup - A pure quality maple syrup is best!

    Lemon Juice - You'll need about a quarter of a lemon or equivalent to one tablespoon.

    Cilantro - Fresh cilantro.

    Garlic - Fresh garlic is best in this recipe!

    Oil - For searing the pork. You can use olive oil, canola oil or avocado oil.

    Tools to have on hand:

    • Cast Iron Skillet or Oven Safe Skillet - To sear/bake the pork tenderloin.
    • Tongs - Turning pork while searing.
    • Measuring Spoons - Properly measuring all of your ingredients.
    • Small Bowl - Whisking the marinade.
    • Storage Bag - Marinading the pork in the fridge.

    The Best Way To Marinade Pork Tenderloin:

    To ensure the marinade does the best job marinating the pork tenderloin: Poke the pork tenderloin all over with a fork. This will allow the marinade to really absorb into the pork.

    In a small bowl whisk together 1 ½ tbsps chipotle in adobo sauce, 3 tbsps maple syrup, 1 tablespoon lemon juice, 1 tablespoon chopped cilantro and 3 cloves minced garlic.

    Place pork in a large storage bag and pour marinade over the pork. Seal bag tightly and place in the fridge to marinade for 4 hours up to overnight.

    **Remove pork from the fridge about 30 minutes before cooking.

    How To Roast Pork Tenderloin In The Oven:

    Preheat oven to 400 degrees.

    Heat 1 tablespoon of oil in a cast iron skillet (or other oven safe skillet) over high heat. Once the skillet is very hot, carefully sear pork tenderloin(WITHOUT DRIPPINGS + discard leftover marinade) for about 2-3 minutes on all sides until you have a nice crust.

    Transfer to the oven and cook for about 12-14 minutes. When done, pork should be at least 145 degrees but I prefer mine cooked to 150 - 155 degrees. Check temperature with a meat thermometer.

    When done, remove pork from the oven and transfer to a plate. Cover with foil to let rest for a few minutes.

    Slice and serve pork with a fresh sprinkle of chopped cilantro. Enjoy!

    What Temperature Should Pork Tenderloin Be?

    Pork tenderloin should be cooked to at least 145 degrees to safely eat. I prefer mine cooked to about 150-155 degrees.
