If you are looking for a healthier and lighter weeknight dinner option, these burrito bowls are it! They are one of our favorite healthy dinners we make often!
I love these Ground Beef Burrito Bowls because they are extremely delicious and so fun to make! They are also a huge crowd-pleaser because everyone can pick and choose what they want to put in their burrito bowl.
We season the ground beef with a homemade taco seasoning blend you are going to love! This recipe will serve about four people depending on everyone's appetite. If you are cooking for a larger crowd, you can double this recipe.

Ingredients That Go Into Ground Beef Burrito Bowls:
Ground Beef - A lean ground beef is best in this recipe. We use a 90/10 fat ratio, but you can use your favorite or what you have on hand. Ground turkey also works great in this recipe!
White Rice - Steamed white or brown rice both work great in burrito bowls. We mix in lime juice and cilantro to make cilantro lime rice.
Black Beans - One can of drained black beans or you can also use pinto beans.
Lettuce - We use romaine lettuce in our bowls, but you can also use chopped spinach, iceberg lettuce, or similar.
Corn - You can use cooked corn cut off the cob, or use a can of corn, drained.
Cheese - We use a blend of cheddar and jack cheese. You can use a Mexican cheese blend as well. Fresh crumbled cotija cheese would also be delicious.
Green and Red Bell Peppers - We use a cup of sliced green bell peppers and a cup of sliced red bell peppers. About a half a pepper each.
Red Onion - A quarter of a red onion, sliced. White or yellow onion can also be used as a substitution.
Lime - We use lime in the cilantro lime rice and to squeeze on top of your burrito for a delicious fresh pop of flavor.
Avocado or Guacamole - To top your burrito bowl.
Cilantro - Fresh chopped cilantro is used for the cilantro lime rice and to garnish your burrito bowl.
Tomatoes - One or Two Roma tomatoes, chopped. You can also use cherry tomatoes or tomatoes on the vine, etc.
Salsa - Use your favorite homemade or store-bought salsa. I linked a few of my favorite quick and easy homemade recipes for you below.
Jalapeños - These are optional for added spice.
Seasonings - Chili Powder, Soy Sauce, Salt, Black Pepper, Garlic Powder, Onion Powder, Cumin.

How To Make Ground Beef Burrito Bowls:
Begin by cooking your white rice.
While the rice cooks, heat a skillet over medium-high heat. Add oil, peppers, and onions. Cook until tender, stirring occasionally.
In another skillet over medium-high heat, add ground beef, seasonings, and soy sauce. Cook ground beef until browned. Drain off any excess grease. Stir in salsa.
Once the white rice is cooked, mix in lime juice and cilantro.
Heat up the black beans and corn in a saucepan or microwave safe bowl.
Arrange burrito bowls with cilantro lime rice, cooked ground beef, black beans, corn, peppers and onions, lettuce, tomatoes, cheese, salsa, guacamole and sour cream! Enjoy!

- 1 tablespoon Soy Sauce
- ½ teaspoon Garlic Powder

- ¼ cup Salsa
Cilantro Lime Rice:
- 1 ½ cups Cooked White Rice

Grilled Peppers and Onions:

- ½ Red Bell Pepper sliced

- 1 15 oz Can Black Beans drained
- 1 15 oz Canned Corn drained
- 2 Roma Tomatoes chopped
- ⅓ cup Jack Cheese grated
- ⅓ cup Cheddar Cheese grated
