    Linguine Chicken Pad Thai

    Linguine Chicken Pad Thai Recipe - Delicious homemade Pad Thai recipe made with linguine, chicken and veggies tossed in a flavor-packed peanut sauce.

    Ingredients To Make Chicken Pad Thai With Linguine:

    Linguine (8 oz.) - I used linguine because it's what I had on hand. You can also use Pad Thai rice noodles, fettuccine or spaghetti.

    Avocado Oil (2 tbsp) - Oil is used to fry up the chicken and veggies. You can use any cooking oil you prefer.

    Chicken Thighs (1 lb.) - Boneless, skinless chicken thighs or chicken breasts cut into small chunks.

    Carrots (2) - Two large carrots, peeled and chopped.

    Red Bell Pepper (1 cup) - Chopped red bell pepper adds a delicious flavor to the Pad Thai. You can substitute for yellow or orange bell peppers as well.

    Onion (1 cup) - We used one yellow onion, chopped. You can also use white or red onion in this recipe.

    Peas (1 cup) - We used canned peas, drained. You can also use frozen peas.

    Cilantro (2-3 tbsp) - Fresh chopped cilantro for garnishing the Pad Thai once finished.

    Lime (½) - You'll need one half of a fresh lime juiced. We will use this at the end to sprinkle on top of Pad Thai.

    Fresh Garlic (1 tbsp) - About 2 cloves, peeled and very finely chopped. I highly recommend using fresh garlic but you can substitute for one teaspoon garlic powder.

    Fresh Ginger (1 tbsp) - Peeled and very finely chopped. I highly recommend fresh ginger because it adds a delicious fresh flavor to the Pad Thai.

    Soy Sauce (¼ cup) - We used low sodium soy sauce in this recipe. You can use regular soy sauce if that's all you have on hand. If using regular - cut the amount to 3 tablespoons.

    Water (¾ cup)

    Brown Sugar (3 tbsp) - I used light brown sugar in this recipe, but you can also use dark.

    Rice Vinegar (1 tbsp) - You can also use White Wine Vinegar if you do not have rice vinegar on hand.

    Sesame Oil (1 tsp) - I used Imperial Dragon sesame oil, but you can use any good quality sesame oil.

    Peanut Butter (2 tbsp) - Smooth or chunky peanut butter both work great!

    Optional toppings: Chopped peanuts, bean sprouts, red pepper flakes, sriracha.

    Tools to have on hand for this recipe:

    Large Skillet + Large Saucepan – To boil your noodles and for cooking chicken/veggies/sauce.
    Measuring Cups + Spoons – To properly measure all of your ingredients.
    Cutting Board + Chef Knife – For prepping the ingredients.

    How To Make Linguine Chicken Pad Thai:

    Cook linguine according package instructions. Drain and set aside for later.

    In a small bowl, mix water, soy sauce, garlic, ginger, sesame oil, rice vinegar and brown sugar.

    Heat your skillet to medium heat and pour in the sauce. Bring sauce to a light simmer, stirring occasionally, for about 10 minutes until sauce darkens. Carefully pour sauce back into the bowl and whisk in peanut butter. Set aside for later.

    In the same skillet you cooked the sauce in, add oil and heat to medium-high heat. Once hot, carefully add chicken, carrots, onions, red bell peppers to the skillet. Season with a pinch of salt and black pepper. Cook, stirring occasionally, until veggies are tender and chicken is cooked through to 165 degrees. Sprinkle in peas.

    Make room in the middle of the pan and crack in the eggs. Scramble until cooked through.

    Add linguine and peanut sauce to the chicken and veggies. Combine everything and cook until hot. Top with chopped cilantro and fresh squeezed lime juice. Enjoy!

    Ingredients
      

    • ½ lb. Linguine
