Potato Buns – Soft and fluffy potato buns make for the perfect hamburger buns! Serve as buns for a cheeseburger, pulled pork sandwich, chicken parmesan sandwich, and more!
What ingredients do I need?
- 1/2 cup minced/mashed potato (russet, golden or red)
- 1/4 cup butter, softened
- 2 tsp active dry yeast
- 1 cup whole milk, warm about 80 degrees
- 1 tsp salt
- 1 tbsp sugar
- 3 cups all-purpose flour
- 1 egg + 1 tsp water
What tools to do I need to make homemade buns?
- grater – Place a medium sized russet potato in the microwave and cook on potato setting or for about 2 minutes. Once potato is fully cooked, peel the skin and grate the potato until you have about a half cup.
- bowl – For mixing, if you don’t plan on using a stand mixer.
- baking sheet – Baking the potato buns.
- cooling rack – Cooling off the buns after the oven.
- measuring cups and spoons
- mixer – To knead your dough, or you can use your hands.
- pastry sheet – A nice big floured surface to make it easy to shape the buns.
The items listed above will make it easier to make this recipe but not all are needed. Get creative with what you have. You can knead the dough with your hands instead of a stand mixer.
How do I make homemade potato buns?
Step 1: Place warm minced or mashed potato in the bowl of your stand mixer. Stir in softened butter, warm milk, yeast, sugar and salt.
Step 2: Begin kneading the flour into the wet ingredients on low speed for about 10 minutes until you have a soft round ball of dough. Transfer dough to a lightly oiled bowl and cover with plastic wrap or a clean towel. Let rise for about 1 1/2 hours or until doubled in size.
Step 3: Line a baking sheet with parchment paper. On a lightly floured clean surface, divide dough into 8 equal sized smooth round balls. Transfer to the baking sheet, cover with a clean towel and let rise another hour or so until dough has doubled in size.
Step 4: Preheat oven to 375 degrees. In a small bowl, whisk together an egg and a teaspoon of water. Brush the tops of the buns with egg wash. Transfer buns to the oven and bake for about 15 minutes until tops are golden. Remove buns from the oven and transfer to a cooling rack. Enjoy!

Can I make this recipe ahead of time or freeze the leftover buns?
These buns will last out on the counter in a container or bag for up to 4 days. You can also freeze these buns for up to 3 months and when you are ready to eat, remove buns from freezer and let them come to room temperature before serving.
