Oven Fried Chicken Sandwiches with Spicy Pickle Mayo – Delicious oven fried chicken thighs layered on top of toasty buns with lettuce and homemade spicy pickle mayonnaise.

I love a good fried chicken sandwich but these “oven fried” chicken sandwiches are even better because they aren’t fried but they are just as good! These Sandwiches are served with a delicious homemade spicy pickle mayo that is out of this world! You guys are going to love these!

This recipe makes four sandwiches, so if you are cooking for a large crowd simple double the recipe. You can also cut the recipe in half if cooking for a smaller crowd. Store leftover fried chicken in an airtight container in the fridge for up to 2 days. Reheat in the oven at 425 degrees for about 10 minutes.

Tools to have on hand for this recipe:

  • Baking Sheet â€“ To bake your fried chicken on.
  • Parchment Paper â€“ To prevent the fried chicken from sticking to the baking sheet.
  • Mixing Bowls â€“ To mix your aioli, and to mix the breading for the chicken.
  • Measuring Cups + Spoons â€“ To properly measure all of your ingredients.
  • Cutting Board â€“ To chop pickles, lettuce, chicken, buns (if using Hawaiian Rolls).
  • Chef Knife â€“ To chop pickles, lettuce, chicken, buns (if using Hawaiian Rolls).
  • Skillet or Toaster â€“ To heat the buns.

Ingredients you need to make Oven Fried Chicken Sandwiches:

  • Chicken Thighs – Boneless, skinless. I recommend chicken thighs in this recipe but breasts will work too.
  • Eggs – To help the breading stick to the chicken.
  • Sour Cream – For coating the chicken prior to breading.
  • Hot Sauce – I used franks red hot, but you can use your favorite hot sauce.
  • Panko Breadcrumbs – You can also use regular breadcrumbs, or homemade.
  • All Purpose Flour –  To help the breading stick to the chicken.
  • Salt & Pepper – Seasoning.
  • Hamburger Buns – I used regular potato buns, but you can use your favorite burger buns.
  • Romaine Lettuce – You can also use iceberg lettuce!
  • Mayonnaise – For the spicy mayo – I like best foods best!
  • Sriracha – Adds a delicious spice to the mayo.
  • Ketchup – For the spicy mayo.
  • Pickle Relish – You can use sweet or dill relish.

How to make Oven Fried Chicken Sandwiches with Spicy Pickle Mayo:

Directions: Preheat oven to 425 degrees.

To make the spicy pickle mayo: Mix all ingredients in a small bowl and set aside.

In a small bowl, whisk eggs, sour cream, hot sauce and set aside. In a second bowl, combine flour, 1/4 tsp salt and a 1/4 tsp pepper. Finally, in the last bowl add breadcrumbs, 1/4 tsp salt, and 1/4 tsp black pepper.

Now take your first chicken thigh and dip it in the flour mixture to cover both sides, then fully dip into the egg mixture, and finally into the breadcrumbs. Repeat with all 4 chicken thighs.

Place the chicken on a parchment paper lined baking sheet. Bake in the preheated oven for 25 minutes, then flip over and cook for another 25 minutes. Chicken juices should run clear and internal temperature should be 165 degrees.

Assemble the chicken sandwiches by spreading the spicy pickle mayo on your buns and top with fried chicken and lettuce. Enjoy!

  • 4 chicken thighs
