Slow Cooker Red Chicken Chili Recipe - Amazing, flavor-packed chili recipe made with chicken thighs, beans, peppers and onions in a slightly spicy red chili sauce. Top homemade chili with shredded cheese, green onions and sour cream.

Homemade chili comes together super fast and easy in your crockpot. All you have to do is add all of the ingredients to your slow cooker, stir and set to cook on low or high.
Chili is one of my favorite recipes to make when I'm on a time crunch or when I know I won't have time to prepare dinner that night. We like to serve our chili with homemade Cornbread Muffins.
This recipe will serve about 4-6 people depending on everyone's appetite. If you are cooking for a large crowd, this recipe can be doubled.

Ingredients You Need To Make Crockpot Chicken Chili:
Chicken Thighs - You'll need one and a half pounds boneless, skinless chicken thighs or breasts.
Green Bell Pepper - We use half a large green bell pepper, which is equivalent about one cup, chopped. You can also use Anaheim, poblano or hatch peppers.
Red Bell Pepper - We use half a large red bell pepper in this recipe. Yellow or orange bell peppers would make a great substitution.
Onion - Yellow, white or red onion all work great in chili. However, we typically use yellow onions or white when making this chili.
Garlic - Fresh garlic is always best for getting the best flavor but if you are in a pinch, use one teaspoon garlic powder.
Diced Tomatoes - One fifteen ounce can of diced tomatoes or two cups fresh chopped tomatoes.
Tomato Sauce - One fifteen ounce can of tomato sauce is needed for this chili recipe.
Kidney Beans - We use dark red kidney beans in our chicken chili but you can switch the beans up to your liking. Cannelloni beans will also work great.
Pinto Beans - We use pinto beans in this chili because they offer a nice mild flavor that I love.
Apple Cider Vinegar - Adds a little acidity and compliments the chili very well.
Worcestershire Sauce - For a nice pop of flavor. I recommend using a quality sauce for best results!
Yellow Mustard - Regular yellow mustard is best in chili but you can also use a half teaspoon of dried mustard.
Seasonings - Chili Powder, Paprika, Cumin, Oregano, Salt and Black Pepper.

How To Make Slow Cooker Chicken Chili:
Simply add all of your ingredients to your slow cooker and stir to combine.
Place lid on your slow cooker and cook on low for about 7-8 hours or on high for 4-5 hours.
When done, gently shred the chicken with tongs or two forks.
Serve chili with your favorite toppings like chopped green onions, shredded cheese and sour cream! Enjoy!

To make your chili spicer - add one or two chopped jalapeños to the slow cooker. You can also add about a ½ - 1 teaspoon cayenne pepper. To control the spice of your chili, add your favorite hot sauce or chopped jalapeños to your bowl when serving.
Store cooled off chili in an airtight container in the fridge for up to 2-3 days. Reheat chili on the stove over medium-low heat.
A few of my favorite things to make with leftover chili are chili cheese dogs, chili burritos, chili cheese omelet, chili fries, or use as a dip with tortilla chips! I also love to serve my chili over steamed white rice or with cornbread muffins.

- 1 Small Yellow Onion chopped
- 3 Garlic Cloves minced
- 1 tablespoon Apple Cider Vinegar
- 1 teaspoon Worcestershire Sauce
- ½ teaspoon Yellow Mustard
- 2 tablespoon Chili Powder
- ½ teaspoon Paprika
- ½ teaspoon Cumin
- ½ teaspoon Oregano
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
