Creamy White Chicken Chili - Easy, creamy and absolutely delicious white chicken chili recipe cooked low and slow in your crockpot!

If you are looking for a super easy and healthy dinner recipe to kick off the new year, this is it! This chili is loaded with chicken, beans, veggies, herbs, peppers and broth with a hint of cream cheese. All you have to do is toss everything into your crockpot and let it do its magic!
We served our chili with homemade chips and dollop of sour cream and we loved it. You can also serve with hot tortillas, steamed rice, shredded cheese and so much more.
This recipe serves about 4 people, so if you are cooking for a crowd, you can easily double this recipe. If you are cooking for a small crowd, don't worry this chili makes amazing leftovers! Leftovers will last in your fridge in a tightly sealed container for about two days.

- Measuring Spoons – To properly measure all of your ingredients.
- Cutting Board + Chef Knife– To chop and prepare the veggies.
Ingredients you need to make Creamy White Chicken Chili:
Chicken Breast/Thighs - Boneless, skinless chicken breasts or thighs both work great in this recipe. You'll need one pound.
Diced Green Chiles - You'll need one 4 oz. can diced green chiles. If you don't have this, you can use fresh green bell pepper or hatch chile and finely chop about a ½ cup.
Cannellini Beans - You'll need one 15 oz can. If you don't have cannellini beans, you can use two cans great northern beans.
Great Northern Beans - You'll need one 15 oz can. If you don't have great northern beans, you can use two cans cannellini beans.
Cilantro - Fresh chopped cilantro is best!
Lime Juice - Fresh squeezed lime juice from one lime or equivalent to about 2 tablespoons.
Chicken Broth - You can use chicken broth, chicken bone broth or vegetable broth in this recipe.
Onion - Yellow, white or sweet onion. You will need one small onion or equivalent to one cup chopped.
Garlic - Fresh garlic is best in this recipe!
Cumin - Adds a delicious flavor to the chili.
Oregano - I used dried oregano but you can also use fresh.
Chili Powder - A good quality chili powder is best.
Cream Cheese - You can use full fat or half fat or neufachatel.

How to make Crockpot Creamy White Chicken Chili:
Add all ingredients to your slow cooker except for the chicken and stir to combine.
Add chicken to the slow cooker and cover with sauce/bean mixture.
Cover and cook on low heat for 7 hours or on high heat for 4 hours.
When done, break up chicken with two forks and stir into the chili. Serve with sour cream and chips! Enjoy!
*Store leftover chili completely cooled in an airtight container in the fridge for up to two days.

Crockpot Creamy White Chicken Chili
Ingredients
- 1 lb. chicken breasts/thighs boneless, skinless
- 1 (4 oz.) can diced green chiles
- 1 (15 oz.) can cannellini beans drained
- 1 (15 oz.) can great northern beans drained
- 2 tablespoon cilantro fresh, chopped
- 2 tablespoon lime juice
- 2 cups chicken broth
- 1 cup onion chopped
- 3 cloves garlic minced
- ½ teaspoon cumin
- ½ teaspoon oregano dried
- ½ tsp salt
- ¼ teaspoon black pepper
- 1 teaspoon chili powder
- 8 oz. cream cheese softened
Instructions

Followed the recipe exactly and it was wonderful! However, it only fed my husband and I, he had a second small bowl. I will defintely double the recipe next time to have it for leftovers. So yummy!

I'm cooking this with rotisserie chicken and on the stovetop (making two kids of chilis and I have only on crockpot). Would all the steps be the same and just not cook it for that long. I made this recipe on the stovetop with leftover turkey from the holidays (minus the oregano, cilantro and salt) and it was fantastic! I probably went a little heavier on the chili seasoning and used a lemon vs lime and white pepper vs black, but it was so so good! Great recipe - thank you!
