Creamy White Chicken Chili – Easy, creamy and absolutely delicious white chicken chili recipe cooked low and slow in your crockpot!

If you are looking for a super easy and healthy dinner recipe to kick off the new year, this is it! This chili is loaded with chicken, beans, veggies, herbs, peppers and broth with a hint of cream cheese. All you have to do is toss everything into your crockpot and let it do its magic!

We served our chili with homemade chips and dollop of sour cream and we loved it. You can also serve with hot tortillas, steamed rice, shredded cheese and so much more.

This recipe serves about 4 people, so if you are cooking for a crowd, you can easily double this recipe. If you are cooking for a small crowd, don’t worry this chili makes amazing leftovers! Leftovers will last in your fridge in a tightly sealed container for about two days.

Tools to have on hand for this recipe:

  • Slow Cooker / Crockpot â€“ For cooking the soup in.
  • Measuring Spoons â€“ To properly measure all of your ingredients.
  • Cutting Board + Chef Knife– To chop and prepare the veggies.

Ingredients you need to make Creamy White Chicken Chili:

Chicken Breast/Thighs – Boneless, skinless chicken breasts or thighs both work great in this recipe. You’ll need one pound.

Diced Green Chiles – You’ll need one 4 oz. can diced green chiles. If you don’t have this, you can use fresh green bell pepper or hatch chile and finely chop about a 1/2 cup.

Cannellini Beans – You’ll need one 15 oz can. If you don’t have cannellini beans, you can use two cans great northern beans.

Great Northern Beans – You’ll need one 15 oz can. If you don’t have great northern beans, you can use two cans cannellini beans.

Cilantro – Fresh chopped cilantro is best!

Lime Juice – Fresh squeezed lime juice from one lime or equivalent to about 2 tablespoons.

Chicken Broth – You can use chicken broth, chicken bone broth or vegetable broth in this recipe.

Onion – Yellow, white or sweet onion. You will need one small onion or equivalent to one cup chopped.

Garlic – Fresh garlic is best in this recipe!

Cumin – Adds a delicious flavor to the chili.

Oregano – I used dried oregano but you can also use fresh.

Chili Powder – A good quality chili powder is best.

Cream Cheese – You can use full fat or half fat or neufachatel.

**Full measurements and instructions are listed below.

How to make Crockpot Creamy White Chicken Chili:

Add all ingredients to your slow cooker except for the chicken and stir to combine.

Add chicken to the slow cooker and cover with sauce/bean mixture.

Cover and cook on low heat for 7 hours or on high heat for 4 hours.

When done, break up chicken with two forks and stir into the chili. Serve with sour cream and chips! Enjoy!

*Store leftover chili completely cooled in an airtight container in the fridge for up to two days.

Sides to serve with homemade chili:

Homemade Flour Tortillas – With only four simple ingredients, flour tortillas are surprisingly easy to make at home from scratch! They are about a hundred times better than store bought tortillas although they do require a little more work.

Tortilla Chips – Store bought tortilla chips just don’t do the trick like warm homemade tortilla chips! And they are so easy to make!

Buttermilk Dinner Rolls – Warm, soft and fluffy buttermilk rolls with a golden outer crust make these the best buttermilk rolls ever.

If you enjoyed this recipe, here are a few more Chili/Soup recipes I think you’ll love:

Creamy Chicken Taco Soup – Easiest taco soup recipe cooked on the stovetop with shredded chicken, pinto beans, tomato and corn in a creamy flavor packed soup finished with cilantro and lime juice.

Slow Cooker Pork Roast Chili – Pork roast pinto bean chili cooked low and slow in a crockpot/slow cooker. This is the easiest, most delicious pork chili ever and it more than exceeded my expectations!

Stovetop Chicken Chili – Warm and comforting stovetop chicken chili loaded with chicken, black and kidney beans, corn, tomatoes, jalapeño and onions.

Minestrone Soup – Made with veggies, beans and noodles in a delicious tomato based broth. This minestrone soup is super easy to make and really hits the spot!
