Spicy Chicken Chipotle Gnocchi - Super delicious gnocchi made with chicken, asparagus, peppers, onions and peas all tossed in a mouthwatering creamy chipotle sauce.

This dish exceeded my expectations! My Spicy Chicken Chipotle Gnocchi recipe is inspired by one of my favorite menu items at 'The Cheesecake Factory". It is loaded with chicken, asparagus, peppers, onions, peas and gnocchi all in a creamy chipotle sauce. It's to die for!
This recipes serves about 4 people. If you are cooking for a larger crowd, you can easily double this recipe. Cooking for a small crowd? This pasta makes amazing leftovers!
Ingredients you need to make Spicy Chicken Chipotle Gnocchi:
Gnocchi - You'll need about one pound. You can purchase gnocchi in the pasta aisle at your local grocery store.
Chicken Breasts or Thighs - Boneless, skinless
Peas - Frozen or canned peas both work great in this recipe. I used frozen.
All-Purpose Flour - To help thicken the sauce.
Oil - Canola, olive, or vegetable oil all work great.
Honey - Your favorite unflavored honey.
Red Bell Pepper - About one red bell pepper.
Chipotle - You'll need 1-2 tablespoons chipotle in adobo sauce.
Onion - Yellow, white or sweet onion work best in this recipe.
Milk - I used whole milk, but you can use low fat or almond milk as well.
Chicken Broth - I recommend using low sodium chicken broth, but if you only have regular that's fine too.
Cilantro - Fresh cilantro is best.
Garlic Cloves - Fresh garlic is best in this recipe.
Parmesan Cheese - Fresh grated parmesan is best in this recipe. If you use the canned stuff, half the amount.
Asparagus Stalks - You'll need about 10 asparagus stalks
Tools to have on hand for this recipe:
- Large Skillet – To cook the veggies, chicken and sauce.
- Cooking Spoon – To stir your ingredients while cooking.
- Measuring Cups and Spoons – To properly measure all of your ingredients.
- Cutting Board + Chef Knife – For chopping veggies, chicken.
- Garlic Mincer – To mince the garlic or you can use a fine grater.
- Large Saucepan – For boiling gnocchi.
How to make Spicy Chicken Chipotle Gnocchi:
Boil gnocchi according to the package instructions. Drain and set aside.
Place chicken in a small bowl and season with ¼ teaspoon salt and ¼ teaspoon pepper.
Heat oil in a large skillet over medium-high heat. Add chicken to the skillet, cover and cook until chicken begins to brown on the bottom. Then, flip over chicken and cover and cook until bottom is nice and golden brown and chicken is cooked through. Juices should run clear. Remove chicken from the skillet and set aside.
Add remaining 1 tablespoon olive oil to the skillet and turn to medium heat. Add the asparagus, peppers, onions, and a pinch of salt and pepper. Cover and cook until veggies begin to soften. Add the minced garlic and peas and cook an additional minute.
Add chicken back to the skillet with the veggies and sprinkle top with flour. Stir in honey and chipotle. Begin to slowly add the milk and chicken broth while constantly stirring. Once sauce begins to simmer, turn down to low, stir in the parmesan cheese. Continue to cook until sauce lightly thickens.
Once the sauce is done, add cooked gnocchi. Stir to combine and top with cilantro and parmesan cheese.
Serve immediately!! Enjoy!

Ingredients
- 1 lb. gnocchi
- 1 lb. chicken breasts or thighs cut into cubes
- 2 tablespoon olive oil
- 2 tablespoon honey
- 1 red bell pepper diced
- 1 ½ tablespoon chipotle in adobo sauce
- 1 small onion diced

- ¾ cup milk
- ½ cup chicken broth
- 10 skinny asparagus stalks ends trimmed, cut into fours
- ¼ cup peas
- ½ cup parmesan cheese grated
- 2 tablespoon chopped cilantro
