The Most Delicious Buffalo Chicken Sandwiches - Oven baked spicy buffalo chicken sandwiches layered with tomatoes, lettuce and ranch dressing on toasted potato buns.

My easy and delicious Buffalo Chicken Sandwiches are a major crowd-pleaser and a recipe you and your family are going to love! This recipe will make four sandwiches but can be doubled or even tripled to serve a larger crowd.
To begin, we bread the chicken and bake in the oven until crisp. Next, the chicken is basted in a mouthwatering simple two-ingredient buffalo sauce. Once the chicken is done, it's topped with lettuce and tomato and placed on toasty buns with ranch dressing.

Ingredients You Need To Make Buffalo Chicken Sandwiches:
Chicken Thighs - Boneless, skinless chicken thighs are used to make the baked buffalo chicken patties. You can also use chicken breasts on your sandwich.
Cornstarch - We use cornstarch to dredge the chicken prior to dipping in egg and breadcrumbs. Cornstarch helps the egg and breadcrumbs stick to the chicken.
Seasonings - Black Pepper, Salt, Garlic Powder + Paprika.
Panko Breadcrumbs - You will need breadcrumbs for breading the chicken. We use panko in this recipe but you can also use any regular unseasoned breadcrumbs or ritz crackers.
Egg - We use an egg to dredge the chicken in. This helps the breadcrumbs stick to the chicken.
Buns - We love using potato buns for this sandwich but brioche or sesame buns would also be delicious. You can even try my Homemade Hamburger Buns.
Franks Hot Sauce - Regular Franks Hot Sauce is best in this recipe. You can also use their buffalo sauce.
Butter - We use unsalted butter in combination with the Franks Hot Sauce to make the buffalo sauce.
Ranch Dressing - Use your favorite ranch dressing. I highly recommend my Homemade Ranch Dressing.
Tomato - Sliced tomatoes go on your sandwich. You can use Roma tomatoes, tomatoes on the vine or similar.
Romaine Lettuce - Romaine lettuce or similar to top your sandwich.

How To Make Buffalo Chicken Sandwiches:
Preheat oven to 400 degrees.
Lay chicken thighs on a plate and sprinkle with cornstarch and seasonings to fully coat. Whisk egg in a bowl and dip each chicken thigh in egg mixture and transfer back to plate. Sprinkle chicken with breadcrumbs on both sides to fully coat.
Transfer breaded chicken to a parchment paper lined baking sheet and bake for 15 minutes. Flip chicken over and bake for 5 more minutes. When done, use a meat thermometer to check chicken internal temperature is at least 165 degrees.
Add butter and franks hot sauce to a microwave safe bowl and cover with a paper towel. Cook in the microwave for about 45 seconds, stirring every 15 seconds. Once melted, stir to combine.
Baste chicken with the buffalo sauce.
Arrange buffalo chicken on lightly toasted potato buns with lettuce, sliced tomato and ranch dressing. Enjoy!
