Chipotle BBQ Chicken Skewers - Grilled boneless skinless chicken thighs skewered and served with a delicious homemade chipotle barbecue sauce.

My homemade chipotle barbecue sauce has a spicy and tangy flavor you are going to love! Not only are these skewers delicious, but they are very simple to make and a grilling favorite in our house.
This recipe will make about 10 skewers and will serve about 5 people giving each person 2 skewers. If you are cooking for a larger crowd, simply double the recipe.
We served our Chipotle BBQ Chicken with homemade baked beans and potato salad. I will link a few of my favorite grilling side dishes for you below.
Ingredients you need to make Chipotle BBQ Chicken:
Chicken Thighs - Boneless skinless chicken thighs are best in this recipe but you may also use chicken breasts.
Avocado Oil - Used to sauté the onion and garlic. You may also use canola, or olive oil in this recipe.
Onion - I used white onion in this recipe, but you can use yellow or red onion as well.
Garlic Cloves - Freshly minced garlic is best in this recipe. If you don't have fresh, you can use 1 teaspoon garlic powder as a substitute.
Ketchup - If you don't have ketchup you can substitute for canned tomato sauce but the bbq sauce will not turn out as sweet.
Water - This will be used in the barbecue sauce.
Chili Powder - Chili powder adds a delicious spice and flavor to the BBQ sauce.
Paprika - Smoked or regular paprika both work great in this recipe.
Mustard -Yellow mustard is best but you may also use dijon.
Apple Cider Vinegar - If you don't have apple cider vinegar on hand you can also use white vinegar.
Worcestershire - Adds a delicious flavor to the bbq sauce. If you don't have Worcestershire Sauce, you may substitute with soy sauce.
Chipotle Adobo Sauce - We use canned chipotle peppers in adobo sauce.
Brown Sugar - You can use dark or light brown sugar.
Tools to have on hand for this recipe:
- Small Saucepan - To make the chipotle bbq sauce.
- Cooking Spoon - For stirring your sauce while it cooks.
- Measuring Spoons + Cups - To properly measure all of your ingredients.
- Skewers - Wooden or metal skewers to skewer the chicken prior to grilling.
- Grill/Barbecue - For grilling the chicken skewers.

How to make Grilled BBQ Chicken Skewers:
*If you are using wooden skewers, you can soak them in water for a few hours prior to grilling to prevent them from burning.
First, make the Chipotle Barbecue Sauce: Heat oil in a small saucepan over medium heat, add onions and cook until translucent. Add garlic and cook for another minute until fragrant. Add remaining ingredients and stir until combined. Bring to a low simmer and cook for about 10 minutes or until sauce lightly thickens. Remove from heat.
Heat the grill to medium heat (about 350 degrees).
Place cubed chicken on skewers and season all sides with salt, pepper, and garlic powder.
Once the grill is hot, place skewered chicken on lightly oiled grill. Turn the skewers every 3-4 minutes until the chicken is cooked through (internal temp 165 degrees), about 20-30 minutes. During the last few turns baste with chipotle barbecue sauce.
Serve Chipotle Barbecue Chicken with fresh chopped green onions and your favorite grilling side dishes.

- 2 lbs. Chicken Thighs (boneless, skinless) cut into 1" cubes
- 1 tsp Garlic Powder
- ½ tsp Black Pepper
- 1 tsp Salt
