Parmesan Roasted Red Potatoes Recipe - Simple and delicious seasoned roasted red potatoes tossed in fresh parsley and parmesan cheese. These potatoes are the perfect dinner side dish recipe.

You are going to fall in love with how easy and mouthwatering delicious my Parmesan Roasted Red Potatoes are. We love to serve ours as a dinner side dish. I will share a few of my favorite main courses to pair with these potatoes for you below.
This recipe will serve about six people as a side. If you are cooking for a larger crowd, be sure to double the recipe. You may also cut the recipe in half if you are cooking for a smaller crowd.
Ingredients you need to make Roasted Red Potatoes:
Baby Red Potatoes - You'll need one and a half pounds of baby red potatoes. We cut them in half prior to baking. You can also use regular red potatoes, just cut them into fours.
Olive Oil - A nice quality olive oil is best. This is used to toss the potatoes in prior to baking. You may also use avocado oil as a substitute.
Garlic Powder - This will go into our seasoning blend. Adds a nice flavor. You can also use dried minced garlic as well. I just don't recommend garlic salt because your potatoes may turn out too salty.
Onion Powder - Also for our seasoning blend. Dried minced onion may also be used as a substitute.
Salt - We almost always use Himalayan or sea salt in our recipes, but you can use your favorite cooking salt. This is used to season the potatoes.
Paprika - We used regular paprika powder in this recipe, but you may also use smoked paprika as a substitute.
Black Pepper - Freshly cracked ground pepper is my favorite but you may also use ground black pepper.
Parmesan Cheese - A good quality parmesan cheese freshly grated off the block is highly recommended. If you don't have that available, you can use whatever parmesan cheese you prefer.
Fresh Parsley - Fresh chopped parsley is recommended to give you that nice fresh herb flavor but you can use dried parsley in a pinch. We will use this at the end to toss the potatoes with parmesan cheese. If using dried, cut amount in half.

How to make Parmesan Roasted Red Potatoes:
Preheat oven to 400 degrees.
Line a baking sheet with parchment paper. Toss potatoes in olive oil on the baking sheet and season with garlic, onion, salt, pepper and paprika.
Turn potatoes cut side down and roast for 20 minutes. Remove potatoes from the oven and carefully, using tongs or spatula, flip potatoes over and bake for another 15 minutes. When done, potatoes will be fork tender and golden brown.
Carefully toss potatoes in a bowl with freshly grated parmesan cheese and parsley. Serve with your favorite main courses. Enjoy!

Reheat potatoes in the microwave on 30 second increments stirring in between. You can also reheat potatoes in the oven on a baking sheet at 350 degrees until potatoes are nice and hot, about 10-15 minutes.
