    Slow Cooker Beef Stew

    Slow Cooker Beef Stew - Hearty and healthy beef stew made with chunks of tri-tip, potatoes, carrots and celery cooked low and slow giving you one delicious stew!

    Making beef stew is easier than ever when you make it in your crockpot! The only real prep you need to do is chop the veggies and beef, unless you buy pre-cut beef stew meat. Then, just plop everything into your slow cooker and forget about it until it’s done!

    You can serve homemade beef stew as a main course, appetizer or side dish. Either way, you really can’t go wrong! We served ours as a main course with homemade french bread and a sprinkle of parmesan cheese. It was absolutely delicious!

    This recipe serves about four people and makes great leftovers! If you are cooking for a crowd, simply double the recipe. If you enjoyed this recipe, I’ll link a few more of my favorite soup and chili recipes for you below.

    Ingredients you need to make Beef Stew in your crockpot/slow cooker and substitutions:

    Beef Roast - I used a boneless tri-tip roast cut into 1 inch cubes. You can also use "beef stew meat" which is already cut up for you. Chuck roast or London broil would also work great in this recipe.

    All-Purpose Flour - Flour helps to lightly thicken the broth. You can also use cornstarch in substitution for the flour.

    Carrots - Two large peeled carrots cut into small pieces. You can also use baby carrots cut into small pieces.

    Celery - You'll need two large celery ribs cut into small pieces.

    Beef Broth - I used low sodium beef broth, but you can also use regular beef broth as well.

    Potatoes - I used two peeled russet potatoes cut into small bite size pieces. You can also use peeled red or golden potatoes.

    Red Wine Vinegar - If you don't have red wine vinegar, you can also use white wine vinegar.

    Onion - Red, yellow or white onion all work great in this recipe. I used one small diced red onion.

    Garlic Cloves - Fresh garlic is best in this recipe. You'll need four garlic cloves, minced.

    Worcestershire Sauce - If you don't have any Worcestershire sauce on hand, you can use a ½ tablespoon of soy sauce in substitution.

    Tomato Sauce - I used one small 8 oz. can of tomato sauce equivalent to 1 cup.

    Thyme - Dried or fresh thyme both work great. If using fresh, double the amount and finely chop.

    Salt & Pepper - I almost always use sea salt and fresh cracked ground pepper in all of my recipes.

    Parmesan Cheese - If you don't have parmesan cheese, you can skip this step, although it adds a delicious flavor to the stew. I also used it to sprinkle on top of the beef stew when finished.

    Tools to have on hand for this recipe:

    • Slow Cooker / Crockpot â€“ For cooking the chili in.
    • Measuring Spoons + Cups â€“ To properly measure all of your ingredients.
    • Cutting Board + Chef Knife– To chop and prepare the veggies.

    How to make Hearty Beef Stew in your Slow Cooker:

    Add chunks of beef in a bowl with the flour and toss to fully coat. Add beef to the slow cooker. Sprinkle chopped veggies on top of the beef chunks.

    In a large bowl, whisk together beef broth, red wine vinegar, tomato sauce, Worcestershire sauce, thyme, parmesan cheese, salt, pepper, and minced garlic. Pour sauce over beef and veggies and stir to combine.

    Place lid on slow cooker and cook on low heat for 7 hours or on high heat for 4 hours.

    When done, meat and veggies will be tender. Serve with bread and a sprinkle of parmesan cheese. Enjoy!

      Looks good. Question, if using tri tip roast, does it need to be cut into cutlets prior, or can I just put the whole meat as it is into the slow cooker and let it marinate and tenderize there, then spread it once tender?
