Baked Southwest Chicken Burritos - Easy and delicious baked burritos with shredded chicken, black beans, corn and cheese topped with fresh homemade corn salsa and sour cream.

These baked chicken burritos are one of my favorite things to make! Not only are they super easy, but they are so good! The corn salsa adds a delicious flavor that puts these burritos on another level. If you are looking for an easy meal plan recipe, this is the recipe for you.
This recipe serves about 3-6 people depending on everyone's appetite. If you are cooking for a large crowd, you can easily double the recipe. If you are cooking for a smaller crowd, these burritos make amazing leftovers too!
You can serve these burritos with classic Mexican side dishes like homemade refried beans, Mexican rice, corn cake and so much more. I will link a few of my favorite side dishes to pair with this recipe for you below. Let's get cooking!

Ingredients you need to make homemade baked burritos:
Burritos:
Tortillas - You'll need six 8"-10" tortillas.
Black Beans - One 15 oz. can or equivalent to about one and a half cups.
Cheddar Cheese - You can use colby jack, jack, or cheddar cheese.
Corn - Fresh, frozen or canned all work great in this recipe.
Shredded Chicken - You'll need about two cups of shredded chicken. Try my delicious super easy stovetop Mexican Shredded Chicken Recipe.
Salsa - About a half cup of your favorite salsa.
Corn Salsa:Â
Corn - Fresh, frozen or canned all work great in this recipe.
Tomato - You can use roma, cherry, heirloom or any you have on hand! I used roma tomatoes.
Onion - I used yellow onion in this recipe, but you can use red or white onion as well.
Fresh Cilantro - You'll need about two tablespoons or a small handful.
How to make Baked Southwest Chicken Burritos:
Preheat oven to 400 degrees.
In a small bowl add shredded chicken and salsa and mix to combine.
Evenly distribute chicken, corn, cheese and beans into the 6 tortillas and roll into burritos.
Transfer burritos to a lightly oiled baking dish and bake in the oven for 25 minutes. When done, remove burritos from the oven and let cool slightly.
In the meantime, mix all of the salsa ingredients in a small bowl and set aside.
Top burritos with corn salsa, sour cream and your favorite hot sauce. Enjoy!
*Store leftover burritos in an airtight container in the fridge for up to 2 days. To reheat, place in a baking dish, covered in foil in the oven preheated to 350 degrees for about 10 minutes. You can also reheat in the microwave for about 30 seconds to 1 minute.

Baked Southwest Chicken Burritos
Ingredients
Burritos:
- 6 Tortillas 8"-10"
- 1 15 oz. Black Beans drained
- 2 cups Cheddar Cheese shredded
- 1 cup Corn frozen or fresh
- 2 cups Shredded Chicken
- ½ cup Salsa
Corn Salsa:
- ½ cup Corn
- 2 Roma Tomatoes diced
- ½ cup Onion diced
- 2 tablespoon Fresh Cilantro chopped
Instructions
- Preheat oven to 400 degrees.
- In a small bowl add shredded chicken and salsa and mix to combine.
- Evenly distribute chicken, corn, cheese and beans into the 6 tortillas and roll into burritos.
