Ingredients you need to make my easy chicken stir fry:
Chicken Thighs – Boneless, skinless chicken thighs are best in this recipe, but you can also use boneless, skinless chicken breasts.
Broccoli Florets – Fresh or frozen broccoli both work great! You’ll need about two cups.
Carrots – Two large carrots, peeled and cut. You can also use baby carrots, cut in half at an angle.
Onion – You can use your favorite type of onion in this recipe. I used yellow. But, you can use yellow, red, white or sweet.
Garlic – Fresh garlic cloves!
Egg – To coat the chicken prior to tossing in stir frying.
Cornstarch – To coat the chicken prior to to tossing in egg. This will give the chicken a nice texture on the outside and give it a golden brown crust.
Honey – I used my favorite local socal raw honey but you can use your favorite honey!
Soy Sauce – I used low sodium soy sauce in this recipe. You can use regular soy sauce, but just be aware it will be a bit saltier.
Rice Vinegar – If you don’t have rice vinegar, you can use white wine vinegar as well.
Sesame Oil – Pure quality sesame oil is best.
Brown Sugar – Light or dark brown sugar both work great in this recipe!

How to make takeout style Honey Sesame Chicken Stir Fry:
In a small bowl, whisk together honey sesame sauce ingredients and set aside for later.
Toss cubed chicken into a large mixing bowl and sprinkle in cornstarch. Toss to coat the chicken. In a small bowl, whisk egg. Pour egg over the chicken and gently mix chicken to coat.
Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Once hot, carefully add chicken to the skillet. Gently spread chicken out into an even layer and let cook until bottom is golden. Don’t panic, the chicken may look weird at this point but it will all come together.
Once the bottom of the chicken is golden, flip chicken over, gently breaking pieces apart. Cook for another 5-7 minutes on the other side until golden. Remove from skillet and transfer to a plate.
Add another half tablespoon of oil to the skillet and add broccoli, carrots and onions to the skillet and begin stir frying for about 5-7 minutes or until carrots and broccoli are tender.
Add chicken back to the skillet with veggies and turn heat up high. Stir fry for a few more minutes and slowly add the sauce while stirring frequently. Remove from heat.
