    Bacon Egg Cheese Croissant

    Bacon Egg & Cheese Croissant - Golden toasted croissants topped with crisp thick cut bacon, sliced melty cheddar cheese, an over-hard egg, butter lettuce, sliced tomato and spicy mayonnaise. This is the ultimate tasty breakfast sandwich!

    Not only is this breakfast sandwich insanely delicious but it is so easy to make! This recipe will make 4 large croissant sandwiches that are very filling.

    You are going to love the creamy spicy sriracha mayonnaise sauce that gives the sandwich such a delicious flavor with the perfect amount of heat. The fresh crunch of the lettuce with the tomato adds a delicious fresh flavor to the sandwich that is unbelievable!

    Bacon Egg and Cheese Breakfast Croissants are very filling on their own, but if you are looking for a side dish to serve with these sandwiches I'll link a few of my favorites below. For example, hash browns, breakfast potatoes and fresh fruit would all be great.

    Ingredients you need to make Homemade Breakfast Croissant Sandwiches:

    Croissants - You'll need 4 croissants for this recipe if you plan on making the full 4 sandwiches. You can adjust the recipe based on how many people you are serving. You can buy fresh baked croissants at your local grocery store.

    Bacon - I love using a thick cut bacon on these sandwiches, but you can use your favorite bacon! You'll need about 2 slices of bacon per sandwich.

    Tomato - I used a beefsteak tomato in this recipe and used two slices per sandwich. You can also use Roma tomatoes, heirloom, tomatoes on the vine, etc. Pretty much use any tomato you have on hand.

    Eggs - You'll need one egg per sandwich. The eggs are cooked over hard in this recipe. If you like a runny yolk in the middle, you can prepare the eggs over easy or over medium as well.

    Cheese - I used sliced cheddar cheese on my sandwiches, but you can also use American cheese or your favorite sliced cheeses.

    Lettuce - You can use butter lettuce, romaine, spinach, or kale in this recipe. They all work great!

    Mayonnaise - This will go into making the spicy mayonnaise. If you don't want the spicy mayo on your sandwich you can skip this but I do highly recommend making it!

    Sriracha - Adds a delicious spice to the sandwich that is not too overwhelming but is so tasty.

    Tools to have on hand:

    • Large Skillet – For cooking the eggs and bacon.
    • Cooking Spatula – To flip the eggs and bacon while cooking.
    • Measuring Spoons + Cups – Properly measuring the sauce ingredients.
    • Small Mixing Bowls – Mixing the sauce.

    How to make the best Bacon Egg and Cheese Croissants:

    Slice croissants in half and lightly toast (optional).

    In a small bowl, whisk together mayonnaise and sriracha.

    Heat a large skillet to medium-high heat. Cook bacon for a few minutes on each side until nice and crisp. Remove bacon from skillet and transfer to paper towel to remove excess grease.

    Wipe the skillet you cooked the bacon in clean with a paper towel. Heat a large skillet over medium heat and add a tablespoon of butter. Move butter around the skillet to coat bottom.

    Crack eggs into the hot buttered skillet giving each egg a little room. Pop the yolk - for an over hard egg. Let cook for a couple minutes. Flip egg over and place a slice of cheddar cheese on top of each egg. Turn off heat and cover the skillet with a lid until cheese is melted.

    Arrange breakfast croissant sandwiches: Spread a tablespoon of spicy mayo on each croissant, top with an egg, 2 slices bacon, lettuce and 2 sliced tomatoes. Enjoy!
