Grilled Spicy BBQ Chicken Thighs – Juicy grilled chicken thighs basted in a spicy homemade barbecue sauce. The low and slow method for cooking these thighs on the grill make for a super tender and juicy end result!

JUMP TO RECIPE

Ingredients you need to make my spicy bbq chicken recipe:

  • Chicken Thighs – boneless, skinless
  • Salt
  • Black Pepper
  • Apple Cider Vinegar
  • Paprika
  • Sriracha
  • Hot Chili Paste – Sambal Oelek
  • Chili Powder
  • Mustard
  • Ketchup
  • Butter
  • Onion- yellow or white
  • Garlic
  • Water
  • Worcestershire Sauce

Tools to have on hand for this recipe:

  • Grill
  • Measuring Cups + Spoons
  • Tongs
  • Basting Brush
  • Small Saucepan

How to make Grilled Spicy BBQ Chicken Thighs:

To make the barbecue sauce: In a small saucepan over medium heat, add butter and onions. Cook until onions are tender. Add garlic and cook for another minute until fragrant. Add remaining ingredients and bring to a low simmer. Cook, stirring occasionally, for about 15 minutes or until sauce thickens up. Remove from heat and set aside for later use.

Season chicken thighs with salt, pepper and oil on all sides. Heat your grill to medium-low heat. Once the grill is nice and hot, place the chicken thighs on smooth side down. The key to juicy and tender chicken is to grill them low and slow. Turn the chicken thighs over every 3-4 minutes. Continue this process until chicken juices run clear and the internal temperature is between 165-170 degrees. Baste the chicken thighs with the homemade spicy bbq sauce during the last few turns.

**If you don’t have Sambal Oelek, you can substitute sriracha.

Here are some of my favorite side dishes to serve with BBQ chicken:

  • Classic American Potato Salad
  • Chipotle Macaroni and Cheese
  • Hawaiian Macaroni Salad
  • Honey Roasted Whole Carrots
  • Creamy Classic Coleslaw

This BBQ sauce is simply amazing!! Better than any sugary ones you may pick up at the grocery store. I will definitely be making this again! I did sweeten it a touch with brown sugar but it would have still been delicious without. Thanks for the great recipe!
